Pumpkin Cake
One of the best cakes ever - try it, everyone will love it!
Cake:
2 cups sugar
2 cups flour
1 tsp. salt
2 tsp. baking soda
4 tsp. ground cinnamon
4 eggs
1 1/2 cups vegetable oil
1 - 15 oz. can pumpkin
Cream Cheese Frosting:
1 cup butter OR margarine, softened
2 - 8 oz. pkgs. cream cheese, softened
2 tsp. vanilla extract
1 - 2 lb. bag powdered sugar
Cake: Mix cake ingredients with an electric mixer until smooth. Pour
batter into a bundt pan that has been coated with nonstick cooking
spray. Bake 55 minutes in a preheated 350 degree oven. Cool cake 15
minutes and invert onto serving platter. This cake may be made in
small loaf pans ... pour batter into 4 small loaf pans and bake 30 - 35
minutes.
Frosting: Cream butter OR margarine and cream cheese with an
electric mixer. Add vanilla extract and powdered sugar. Mix just until
smooth and creamy. This is a double portion of frosting because
this cake recipe makes a large cake.
